VeganMoFo day #23 - Chickpea Pleasing

I made sandwiches with SusanV's Creamy Chickpea Salad with Fresh Herbs for lunch today. Really yummy. It does sort of remind me of tuna fish, but not in a gross fishy way. It was really easy to prepare and the flavor was awesome. Thanks so much Susan for always being so generous and sharing your recipes.

Nibbler likes to hide and he hates the camera, so this is a typical pic of him. I'm sure everybody knows where I got his name.

Your cats have such great names!

I'm so glad you liked the chickpea salad. And I have to agree that Nibbler is a great name. I have a black and white cat whose name is Bud--named by the friend who gave him to us after her favorite beer. I often wish we hadn't agreed to keep the name!

Hi Bethany,

Your chickpea salad looks great. I am always looking for new sandwich ideas.

I also like the picture of Nibbler- cute name!

Almost done w/ the animal intros. Just 1 more to go :)

Susan - can't thank you enough for the salad. pure tasty genius.

my tricky way of changing names is to say they are nicknames. Spotted Devil Cat is a nickname for Prometheus. His most popular nickname is tubs.

Peepa is a nickname Propecia. so is Sir Peeps a lot and Daddy's little girl (though peepa is a boy).

The nicknames for those cats can go on forever.

Hah... Nibbler. So awesome.

I've been meaning to try some sort of tuna-like salad spread. That looks good.
