Curry Wrap Supreme and Cats in a Box

I made the Tomato Chickpea Curry in Eggplant Shells from The New Vegan cookbook. I sort of messed it up by adding too much curry powder. To fix it, I added in some pumpkin puree, which made it taste really really good. The shredded coconut in this curry gives it a really special flavor.

When I scooped out the roasted eggplant to add to the curry, I realized that I had over roasted them because they flattened out. So no stuffing the eggplant shells for me. I also added in some roasted zucchini.

Here are the leftovers on a sundried tomato wrap before I added salsa and Teese. I've been in wrap mode lately for some reason.


In this sequence of pics from before Scoatt moved to VT, it appears that Scoatt is taking over the box from Chippy. I don't think that is the case, I think he was trying to share the box with Chippy. Poor Chippy, everybody loves him way too much :)

I love cats in the box! Seriously... they get sooo happy when they have a box to lay in.

I think Chippy just decided the box wasn't cool anymore, now that it had been "discovered."

That's too funny. I always leave boxes we get out for a while for the cats to play with. I swear I am never buying another cat toy ever again. Between the boxes, twist ties, and pens they show no interest in the toys we've bought for them anyway!

that's funny, Chippy loves pens. sometimes I line some up on a table and see how long it takes before he notices. That's how we end up w/ all the pens under the couch.

Oh i was on my way to make a moussaka which is chickpeas eggplants in tomato sauce... I just love the combination... I love the addition of pumpking...sounds delish! BTW we share the same name ;)

The story told through the kitty pics is so sad! My kitties aren't great at sharing, either.

what is it about cats and boxes? my cat does the same thing!!! she tries to squeeze into boxes that she obviously can't even fit her head in.

my pugs are scared of boxes :(

by the way -- you could always donate all your canned soups to the hungry and homeless. there are lots of can drives this time of year -- you can find drop boxes at banks, post offices, stores, etc. When we decided to stop eating processed foods (i.e. canned soup) we donated ours to a homeless shelter and they were so thankful. :) Makes you feel good to help out.

That is a great idea, don't know why I didn't think of it, thanks. I really don't like eating canned soups that much. Except Amy's vegetable noodle.
