Is anybody sick of pumpkin yet? Didn't think so!

I saw the Double Layer Pumpkin Cheesecake on SusanV's blog and had to try it. It was really easy to make - all food processor action, my kind of recipe. And the results were delicious, light and fluffy, just like cheesecake - even with the yummy thin lemon layer on the bottom. I couldn't find a graham crust in my co-op, so I used a regular white frozen crust. You gotta try it.



Here is a pic of Andy trying to read a book in the overgrown cat cage. As you can see, the cats (Faline in this case) have to crawl all over us no matter where we are :). In this pic, it's still summer and really hot.
I got 4 of them to go outside yesterday in the cat cage (on their own) and it's really cold outside. They are so clingy!

Curry Wrap Supreme and Cats in a Box

I made the Tomato Chickpea Curry in Eggplant Shells from The New Vegan cookbook. I sort of messed it up by adding too much curry powder. To fix it, I added in some pumpkin puree, which made it taste really really good. The shredded coconut in this curry gives it a really special flavor.

When I scooped out the roasted eggplant to add to the curry, I realized that I had over roasted them because they flattened out. So no stuffing the eggplant shells for me. I also added in some roasted zucchini.

Here are the leftovers on a sundried tomato wrap before I added salsa and Teese. I've been in wrap mode lately for some reason.


In this sequence of pics from before Scoatt moved to VT, it appears that Scoatt is taking over the box from Chippy. I don't think that is the case, I think he was trying to share the box with Chippy. Poor Chippy, everybody loves him way too much :)
